Abstract
Bu çalışmada, marinat (sade ve baharatlı) ve tuzlama yöntemleri ile işlenip muhafaza edilen istavrit balığının (Trachurus mediterraneus S, 1868) bazı kalite değişimlerinin belirlenmesi amaçlanmıştır. Araştırma süresince örneklerde; duyusal analizler ile birlikte, total volatil bazik azot (TVB-N), trimetilamin azot (TMA-N), pH ve tiyobarbiturik asit (TBA) analizleri aylık ve üç tekerrürlü olarak yapılmıştır, örnekler buzdolabında (4C1) 120 gün boyunca depolanmıştır. Araştırma sonunda, salamura ve marinat (tuz ile sirke ve baharatlı) ürünlerinin sırasıyla 30, 60 ve 90 gün bozulmadan saklanabileceği belirlenmiştir. Ayrıca, duyusal analiz sonuçlarına göre baharatlı ürünlerin diğer ürünlere göre iyi kalitede olduğu belirlenmiştir.
The aim of this study was to determine some quality changes of the horse mackerel {Trachurus mediterraneus S, 1868) processing storaged marinade (simple and brining) and salting methods. During the experiment, triplicates being used for every month, samples were analyzed for sensory properties, total volatile basic nitrogen (TVB-N) content, trimethylamine nitrogene (TMA-N) content, pH value and thiobarbituric acit (TBA) content. Samples were stored in a refrigerator (4°C±1) at 120 days. At the end of the research, it was determined that brining, marinade (with salt-vinagar and brining) produces can be stored without "spoiled" at the day 30. 60 and.90 days, respectively. Therefore, according to sensory analyses results it was determined that spicing produce was better quality than others produces.
