SAMSUN VE ÇEVRES NDE DOĞAL OLARAK YET ŞEN KIZILCIKLARIN(CORNUS MAS L.) ANT OKS DAN KAPAS TESÖZETBu çalışma, Samsun ve çevresinde yetişen kızılcıkların doğal antioksidan bileşiklerini veantioksidan kapasitesini belirlemek amacıyla yapılmıştır.Araştırma materyalini kızılcık yetiştiriciliğinin fazla yapıldığı Kavak, Ayvacık, Havza,Vezirköprü ve Samsun'un yüksek kesimlerinden sağlanan 24 kızılcık örneği oluşturmaktadır.Kızılcık meyvelerinde en-boy, kg'daki tane sayısı, et:çekirdek oranı ve renk gibi fizikselölçümler yanında kuru madde, çözünür katı madde, titrasyon asitliği, pH, şeker analizleri gibikimyasal analizler yapılıp genel fiziksel ve kimyasal özellikleri ortaya konulduktan sonraörneklerin doğal antioksidan içerikleri ile antioksidan kapasiteleri belirlenmiştir. Ayrıcaörneklerin antosiyanin kompozisyonu da belirlenmiştir.Çalışma sonucunda, toplam fenolik madde 2812.98-5790.08 mg/kg; toplam antosiyanin1120.52-2925.38 mg/kg, askorbik asit 163.60-883.91 mg/kg, FRAP 16.21-94.43 µmol/g, EC500.29-0.69 mg/mL değerleri arasında bulunmuştur. Kızılcık örneklerinde dominant antosiyaninolarak pelargonidin-3-glukozit tespit edilmiştir.Anahtar kelimeler: Kızılcık, Cornus mas L., antioksidan kapasite, antosiyanin, EC50
ANTIOXIDANT CAPACITY OF CORNELIAN CHERRY (CORNUS MAS L.)FRUITS NATURALLY GROWN IN SAMSUN AND SURROUNDINGSABSTRACTThis study was prepared to determine natural antioxidant compounds and antioxidantcapacity of cornelian cherry fruits which grown in Samsun and surroundings.The study material was consisted of 24 cornelian cherry sample from Kavak, Ayvacık,Havza, Vezirköprü and high regions of Samsun where cornelian cherry is cultivatedextremely.Besides physical measurements such as width-length, grain per kg, the rate of flesh /stone and colour, chemical analysis such as dry matter, soluble solids, titration acidity, pH,sugar analysis were performed. After the general physical and chemical characteristics,natural antioxidant contents and antioxidant capacities of samples were determined. Inaddition, anthocyanin composition of samples was determined.According to the results, values for total phenolic matter were found between 2812.98and 5790,08 mg/kg; total anthocyanin between 1120.52 and 2925.38 mg/kg, ascorbic acidbetween 163.60 and 888.91 mg/kg, FRAP between 16.21-94.43 µmol/g and EC50 between0.29 and 0.69 mg/ml.
