Abstract
Bu çalışma, Samsun ilinde açıkta satılan inek sütlerinde somatik hücre sayısı (SHS) üzerine etkili bazı faktörlerin saptanması amacıyla gerçekleştirilmiştir. Araştırma materyalini, Nisan 2011-Ocak 2012 arasında üç farklı satış noktasından (İstasyon, Atakum ve Modern Pazar) toplanan çiğ süt örnekleri ve satıcılardan sağlanan anket verileri oluşturmuştur. Doğrudan Mikroskobik Sayım yöntemiyle elde edilen SHS değerleri, homojeniteyi sağlamak için log10 tabanına göre transformasyona tabi tutulmuştur. SHS üzerine sürü büyüklüğü (SB), pazar yeri (PY), işletmenin bulunduğu ilçe (İİ) ve işletme sahibinin eğitim düzeyi (ED)'nin etkisi tek yönlü varyans analizi (ANOVA) ile belirlenirken, SHS değerlerindeki mevsimsel değişimler (M)'in varyans analizinde Kruskal Wallis test yöntemi, gruplar arası farklılıkların tespitinde ise Mann-Whitney U testi kullanılmıştır. Tüm istatistiksel analizler SPSS paket programında, 0.05 önem düzeyinde gerçekleştirilmiştir. LogSHS bakımından ED ve SB gruplarında istatistiksel fark bulunmazken, M gruplarına göre yapılan değerlendirmede, yaz ve sonbahar mevsimlerine ait logSCC ortalamaları diğer gruplardan yüksek (P<0.001) bulunmuştur. Bunun yanında logSHS değerleri üzerine PY'nin de istatistiksel olarak etkili olduğu (P<0.05) belirlenmiştir. Sonuç olarak çalışma, Samsun ilinde tüketime sunulan açık sütlerin SHS'na bağlı olarak önemli riskleri barındırdığını, bu olumsuzluğun muhafaza ve pazar koşulları üzerinde yoğunlaşarak giderilmesi gerekliliğini açıkça ortaya koymaktadır.
This study was conducted to determine the effects of some factors on somatic cell count (SCC) in unpacked cow milk samples in Samsun province. Raw milk samples and questionnaires collected from three different selling points (Istasyon, Atakum and Modern Bazaars) between April 2011 and January 2012 were used as the investigation materials. The SCC values were determined by direct microscopic method and then, data were transformed to log10 base to obtain homogeneity. One-way ANOVA was used to detect the changes in SCC by herd size (HS), location of bazaar (LB), location of farm (LF) and education level of dairy owner (EL) . Also, changes in SCC by season (S) were evaluated using Kruskal Wallis test for variance analysis and Mann-Whitney U test was used for detection of group differences. All statistical processes were performed by SPSS packet program at the 0.05 level. While no significant differences were found in logSCC means by EL and HS groups, in S evaluation, logSCC means of summer and autums groups were higher (P<0.001) than those evaluated in the other S groups. Besides, effect of LB on logSCC was statistically significant (P<0.05). Finally, the present study clearly shows that unpacked cow milk samples sold in Samsun province include marked risks by SCC and this negatively case should be removed applying more focus on storage and marketing conditions.
