Abstract
Bu araştırma, Samsun piyasasında tüketime sunulan sucukların genel kalite özelliklerinin saptanması amacıyla gerçekleştirilmiştir. Araştırma materyali olarak farklı firmalara ait 17 adet sucuk örneği kullanılmıştır. Analiz sonuçları sucuk örneklerinin kalite özellikleri Dakımından faklılık gösterdiğini ve çoğunlukla da arzu edilen kalitede olmadığını ortaya koymuştur.
This research was carried out to determine general quality properties of soudjouks which are consumed in Samsun. A total of samples belong to various firms were examined in this study. Analysis results indicated that there were differences among the soudjouks samples with respect to quality properties and most of the samples were low-quality.
